Sour Cream Coffee Cake Loaf Recipe 

I hope everybody is having a great day! Being so close to Christmas, it is time to divulge my Sour Cream Coffee Cake Loaf Recipe. You might have noticed that in my last article I kept my introduction fairly short and I might not be including a lot here either.  I do like sharing things with all of you, but I just don’t have a lot to report (and that’s a very good thing!).  

Now that it is coming to the cooler time of the year things have started to slow down. I have been making healthy dinners for my family taking long walks with my boxer puppy and listening to podcasts, and reading in bed.  

The stuff I’ve been reading about is mainly diet and recipes and they are perfect for cold, cloudy days but aren’t necessarily that exciting to write about.  So despite the silence, everything is well here. 

I have had mixed feelings about the Fall mantra of drinking green juices for my meals and cutting sugar. On the one hand, I really love healthy recipes and definitely want to be as healthy as I can be.  On the other hand, however, it is cold right now in the Midwest and my favorite way of coping with chilly drafts and low hanging dark clouds is warming up the house with a large batch of baked goodies.  I have been able to come up with a good comprising of finding a very healthy baked good in order to cure my winter blues and not have my Fitbit yell at me. 

A perfect example is the Blueberry Citrus Sour Cream Coffee Cake loaf. It is sweetened naturally with maple syrup (and if you are in the mood, topped with a slight amount of coarse sugar) and loaded with flavorful and nutritious pecans, dried fruit and citrus.  The sour cream provides a nice moist texture without having to add any oil or butter. The slices can be lathered with cream cheese, yogurt, or sour cream and then sprinkled with the remaining pecans or fruit to get your day off to a fantastic start.  This loaf is so tasty, but despite the temptation, don’t eat the entire loaf since that would defeat any efforts at establishing healthy habits that we are attempting to establish.   

I used the dried blueberries from Graceland Fruit to make this loaf.  I always love supporting a Midwest company when I have chance and these berries definitely did not disappoint.  They can be found in a majority of Kroger locations.  If you have a hard time getting a hold of them, then you can use any dried blueberries (or cranberries or cherries) that you can find. 

Blueberry Citrus Sour Cream Coffee Cake Loaf

The loaf is ideal for a healthy afternoon snack or breakfast.  Naturally sweetened with dried blueberries and maple syrup.

Cuisine: Vegetarian

Ingredients

2 tbsp coarse sugar

1/4 cup dried chopped blueberries

1 tsp citrus zest

1 tbsp citrus juice

1/2 cup maple syrup

1 cup sour cream

2 large eggs, beaten slightly 

1/4 tsp salt

1 tsp baking soda

1 cup whole wheat flour

1 cup all-purpose flour

Instructions

Grease a 9-inch loaf pan and preheat the oven to 350 degrees. 

Whisk together salt, baking soda, whole wheat flour, and all-purpose flour into a large mixing bowl. In the middle of the dry ingredients make a well and add in zest, citrus juice, maple syrup, sour cream, and eggs.   

Fold the dry ingredients into the wet ingredients until they are just combined.  Fold in blueberries and pecan and then transfer batter into the prepared loaf pan.  Take coarse sugar and sprinkle on top. 

Bake for 35-45 minutes or when a toothpick comes clean from the center of the loaf.

Let it cool.  Slice and serve with yogurt or butter and enjoy!!!
